Sonya's Irish Soda Bread
This is a recipe just like mama used to make, because this was sent in by my mum. Here is what she says:
"This is a very easy traditional Irish recipe for a rough round brown loaf.
It's the first thing I ever cooked when I was about 8 or 9 year old. I don't
know why it's called a soda loaf because it's not the same kind of soda bread
which John Stuart is talking about which is white. " - Sonya Leonard
Ingredients:
- 450g wholemeal flour
- plain flour
- rolled oats
- baking soda
- tsp salt
- buttermilk/yoghurt
Instructions
Combine the flour, oats, baking soda and salt in a large bowl. Add the
buttermilk/yoghurt gradually to form a soft dough and turn out onto a lightly
floured board.
Knead the dough very lightly but do not overwork or the bread will become
tough.
Shape into a large round and place on a greased baking tray. Cut a deep
cross in the centre of the round.
Bake at 450F/230C for 8-15 minutes. Reduce temp. to 400F/200C for 20-25 mins
until loaf sounds hollow when tapped underneath.
Eat when warm. Very good with cheese and butter.
