Pasta with Eggplant, Fetta and Sausages

This is another Moki specialty. It combines the sausage (always popular) with the deliciousness of a variety of vegetables. Hence, it is a winner. You may want to prepare the aubergine in advance i.e. prepare the eggplant today for tomorrow's dinner so that it is ready to go when you want to make this recipe. It is still easy peasy though.
Time: 2 mins prepare aubergine + 30 min wait
5 mins prepare other ingredients
40 minutes cooking time with 2 breaks
Serves 4
Ingredients:

Eggplant (or aubergine) - prepared as below - N.B: needs 30 mins in salt else will taste very bad

onion

garlic
-
2 cans tomatoes

1 tblspn tomato paste or tomato sauce

2 tsps vinegar
-
oregano
-
sausages (6 thick ones)

200 gm Fetta cheese
-
4 shallots
-
1/3 cup chopped black olives (can be left out if you find these revolting)

Serve with pasta.
Instructions

Slice and salt aubergine - leave 30 mins and wash & dry. Cook in microwave for 5 mins (if you don't have a microwave, just cook in sauce for a bit longer.) If you are making this all on the same day, do step 2 whilst you wait for the eggplant to perspire and step 3 while the eggplant is in the microwave.

Chop onion, shallots and garlic.

Fry onion & garlic. Add 2 cans tomatoes & tomato paste. Add 2 tsps vinegar and oregano. The shallots will be added later.

Add eggplant and cook 20 mins

In a separate pan, fry sausages (should take less than 5 minutes), slice and add to sauce. Cook for 15 minutes. Meanwhile do the pasta.

At end, stir through 200 gm Fetta cheese, 4 shallots and 1/3 cup chopped black olives.

Drain pasta and mix all together.
