Quick Salad Nicoise
This recipe was sent in by my mum, Sonya Leonard, who is trying to wrestle the top contributor award from the Australians. Go Ireland/Scotland. Come on Brits, even English, show those convicts that we can cook (me excepted). Send in those recipes! My mum says about this
" Here is another nice easy healthy summer recipe using tinned tuna, a good larder staple as you say."
Ingredients:
- 110 g mixed salad leaves
- 2 tins tuna in oil
- 110 g French beans, cooked until just done
- 4 tomatoes, each cut into 8 pieces
- 4 hard boiled eggs
- 10-12 cooked new potatoes, cut into quarters
- Handful of black olives
- small tin anchovies in oil
FOR THE DRESSING:
- 6 tbsp. olive oil
- 1 tsp Dijon mustard
- 2 tsp. white wine vinegar
- salt and pepper
Instructions
- Put the salad leaves into a large bowl.
- Drain the tuna and flake it onto the salad leaves.
- Add the beans, tomatoes, eggs, potatoes, olives and anchovies.
- Place all the dressing ingredients into a bowl, season and whisk.
- Pour over salad and serve immediately.
