Spiced Pilau Rice
This recipe was sent in by Darren Gibson, who, when he's not on his mountain bike, reading Proust or listening to toons on 'Lin' (his beloved hi fi) loves nothing more than to whip up an Indian taste sensation. This is the perfect accompaniment to any of his curries.
Ingredients:
- 10 fluid ounces rice in measure jug
- 20 fluid ounces boiling water
- 50 g ghee
- 1 small onion chopped fine
- 1 cinnamon stick
- 3/4 teaspoon cumin seeds crushed
- 1 bay leaf
- 2 cardamon pods crushed
- 1 dessertspoon turmeric
Instructions
- Fry onion until soft (about 5 minutes)
- Put in spices and bayleaf and fry for a further 2 minutes
- Stir in rice and coat it
- Pour in boiling water
- Simmer for 15 minutes with the LID ON
- Serve, fluff with a skewer and remove the cinnamon
