Austrian Apple Cake

Given to me by a lovely lady in Austria, whose husband was a right swine of a man who worked with my Dad, ate Harrods Christmas Puddings raw and called Rolls Royces 'Royce Rollses'

Ingredients

  • 1 Large Dessert Apple
  • 3 eggs
  • Weigh the eggs in shells and then have the same weight of:
    • Self-raising Flour
    • Sugar
    • Butter

Instructions

  1. Mix sugar and butter together until light and fluffy - all the recipes say that and I've never quite worked out how you get to that stage, but if it's ok for them, then it's ok for us.
  2. Add beaten eggs.
  3. Add Flour
  4. Mix together until all ingredients combined.
  5. Pour into medium cake tin - pre-buttered and floured.
  6. Arrange sliced apples all over top - in a pretty wheel effect if you like, but not if you don't.
  7. Bake at 180 C for 1 hour.
  8. Serve as it is or with extra thick double cream, creme fraiche or greek yogurt.
  9. Any other fruit can be used, such as raspberries, apricot halves, plum halves. Equally tasty but they tend to sink into the mixture, sometimes ending up right at the bottom.
