Oatmeal and berries mixed with honey, cream and liquer - berry jummy! This recipe was sent in by my mum. This dessert has a more than slightly Scottish flavour to it. Again it's based on summer berries but with a little twist.
Serves 4
Ingredients:
- 40 g medium oatmeal
- 400 g summer berries (raspberries, loganberries or tayberries work best)
- 400 ml whipping cream
- 4 tbls whisky liqueur (Drambuie is a good one)
- 1 tsp clear honey
Instructions
- Toast oatmeal under grill until brown. Leave to cool.
- Whip the cream and fold in the honey, liqueur and oatmeal. A hand blender can make this much easier.
- Divide the fruit into 4 large sundae glasses until about 1/2 full.
- Spoon in 2-3 tbls of the cream mixture and finish off with more fruit and a topping of cream.
