I was wary of having a recipe that pirated the web-site name when it wasn't written by us, but then realised that in EasyPeasyMeals, everyone is us, we are all all part of the easy peasy world. Lets all hold hands and eat.

This was sent in by Barb Slater. Who says "The first time I made this I'd lost the recipe but thought I could remember it. We had guests coming at short notice so needed a quickie dessert.

I forgot to drain the fruit and ended up with something resembling white punch with things floating in it. Almost drinkable - didn't look nice at all. So kind of strained it and retrieved the mess and served it up with a flourish as though I'd meant it to look like this. They ate it anyway.

Ingredients

  • 1 can crushed pineapple drained
  • 1 can mandarin segments drained
  • 1 packet soft marshmallows pink and white
  • 1 carton sour cream

Instructions

  1. After draining the liquid from the cans place the fruit in a pretty bowl. Add the marshmallows and then fold in the sour cream.
  2. Leave in refrigerator for about 1 hour until it sets.
