This recipe was sent in by Moki who took the initial work of George Best (not the clapped out footballer) and created a entire range of delicious muffins that spanned pretty much every combination you can think of. You need a muffin tray for these and you should line it with large patty cases. Because there is no butter or oil in this recipe (hence the low-fat nature of the muffin) they are best eaten on the same day you make them. On some occasions, I was so excited about the muffins, I would burn my mouth wolfing them down. Waiting for them to cook was just a form of torture.

Ingredients:

  • 1 cup self-raising flour
  • 1 cup Wholemeal self-raising flour
  • 1 egg (beaten)
  • 1/4 cup apple juice
  • approx 1 1/2 cup skim milk
  • 1/2 tspn cinnamon
  • 1 cup coconut
  • 1 packet of dried fruit or equivalent (eg 2 chopped bananas)

Instructions

  1. Sift 1 cup SR flour, 1 cup Wholemeal SR flour with cinnamon
  2. Add 1 cup coconut, dried fruit, 1 egg (beaten), 1/4 cup apple juice and approx 1 1/2 cup skim milk - Mix (Do NOT overmix)
  3. Bake 180-210 C for 20 mins.
  4. Combinations to try: banana & chocolate chip; date & banana & walnut; fig, banana & walnut. If you can lay your hands on some unsalted macadamia nuts, add them. You won't look back.
