Hola Espanola! At least, I think this is Spanish. This recipe was sent in by George who we think is trying to overtake this website. Back off, George! We thought of it first. Nonetheless, keep those recipes rolling in. Fritata is basically an omelette with potatoes in it.  Fritata sounds better though.

Serves 3 or 4
Preparation time 10 - 15 mins
Cooking time about 30 - 35 minutes.

Ingredients:

  • 2 large potatoes (or a few smaller ones).
  • 1 onion.
  • 3 cloves garlic
  • vegetables ( basically anything you have - capsicum, mushrooms, broccoli, sweet potato etc).
  • 5 eggs - and seasonings, e.g salt/pepper and herbs. ( any herbs can be used such as parsley, rosemary or thyme)
  • cheese.
  • olive oil.

Utenstils

  • non-stick frying pan, preferabley a small one
  • lid for frying pan
  • Chopping knife and board
  • whisk and bowl
  • cheese grater

Instructions

  1. Finely slice the potato and the onion. Chop or crush the garlic.
  2. Microwave the finely sliced pototo to get it started.
  3. Place garlic and onion in non-stick fry pan with olive oil and lightly cook for a couple of minutes.
  4. Add the par cooked sliced pototo and cook for a further 3-4 minutes.
  5. While this cooks, chop up your vegetables
  6. Add your chopped vegetables and cook for a further 3 minutes.
  7. lightly beat and season the eggs
  8. Gently add the egg mixture and make sure the heat is on the lowest possible setting.
  9. Cover the fry pan and cook for about 20 minutes - covered. Move the fry pan around from time to time.
  10. Sprinkle with grated cheese and put the fry pan under the griller for a few minutes to melt the cheese and cook the top of the frittata.
  11. Ensure the egg on the top is cooked before serving.

Good served with crusty bread or a salad. And a good one for using up left over vegetables
