Stuffed Potatoes

1 potato per person

Perfect if you've got leftovers like chilli con carne. You can par cook the potatoes, scoop out the flesh, add your leftovers, top with cheese and a little paprika and another meal is done!

Preparation 2 minutes
Cooking 65 minutes, less if using a microwave

Ingredients:

    Large potatoes, scrubbed (leave skin on)

Fillings: - choose from below

  • Chilli Con Carne
  • Fried onion, garlic, chopped bacon mixed with potato flesh, yoghurt, cheese.

Instructions:

  1. Prick potatoes all over with fork (essential if you are going to par-cook potatoes in microwave)
  2. Place in hot oven (gas mark 6) for 40 minutes. May take longer if you've got really BIG potatoes. Or cook them in the microwave to speed things up. In my micro (850W) it seems to take about 5 minutes per potato, though check the microwave handbook.
  3. Handle hot potatoes with a clean tea towel. Cut them in half and after about 5 minutes of cooling time, scoop out the flesh.
  4. Add your filling. Top with cheese, paprika, or pepper.
  5. Cook on gas mark 5 for 20 minutes.
