" Here is another nice easy healthy summer recipe using tinned tuna, a good larder staple as you say."

Ingredients:

  • 110 g mixed salad leaves
  • 2 tins tuna in oil
  • 110 g French beans, cooked until just done
  • 4 tomatoes, each cut into 8 pieces
  • 4 hard boiled eggs
  • 10-12 cooked new potatoes, cut into quarters
  • Handful of black olives
  • small tin anchovies in oil
FOR THE DRESSING:
  • 6 tbsp. olive oil
  • 1 tsp Dijon mustard
  • 2 tsp. white wine vinegar
  • salt and pepper

Instructions

  1. Put the salad leaves into a large bowl.
  2. Drain the tuna and flake it onto the salad leaves.
  3. Add the beans, tomatoes, eggs, potatoes, olives and anchovies.
  4. Place all the dressing ingredients into a bowl, season and whisk.
  5. Pour over salad and serve immediately.
