Ingredients:
- 1 small can of chickpeas
- 185 gram tin of tuna chunks in oil.
- sliced tomatoes.
- good quality olives.
- rocket/lettuce/mixed salad leaves.
- sliced red onion.
- sliced capsicum
- any other things you like in your salad.
- lemon juice.
- salt and pepper.
- finely sliced parmesan cheese
Instructions
- Put everything in a salad bowl except the tuna and combine to make a salad. Open the tuna and drain off the oil into a bowl. Mix the drained oil with some lemon juice and salt and pepper - this will be the salad dressing.
- Drizzle the dressing over the salad. Finally put the tuna chunks on top of the salad and top with some finely sliced parmesan cheese.
